Quick Kale or Arugula Salad
In order to get the amount of calcium shown in the nutrition facts, I assume that you will have about 9 ounces of kale or arugula left after you trim away the beefier stalks. If you are buying baby kale or arugula, you will need about 9 ounces.
Ingredients:
- 12 ounces kale or arugula, washed, tougher part of stems removed and cut into 1/4″ ribbons
- 1 cup red cabbage
- 1 bell pepper, chopped
- 1/2 cup chopped green or red onion
Directions:
- Toss all ingredients in a large bowl.
- Serve with any salad dressing you like.
