Multi-colored Salad
In order to get the amount of calcium shown in the nutrition facts, I assume that you will have about 6 ounces of kale left after you trim away the beefier stalks. If you are buying baby kale, you will need about 6 ounces.
Ingredients:
- 1/2 pound kale, arugula, collard greens, mustard greens, turnip greens or a mixture, washed and cut into 1/4″ ribbons
- 1 large tomato, washed and chopped
- 2 carrots, grated
- 1 yellow bell pepper, chopped
- 1 cucumber, chopped
- 1 cup chopped red cabbage
- 1/2 cup chopped green or red onions
Directions:
- Toss all ingredients in a large bowl.
- Serve with any salad dressing you like.
