Brown Rice

  • 1 1/3 cups brown rice, rinsed
  • 3 1/3 cups water
  • 1/4 tsp salt (optional)


  1. Place the rice in a heavy-bottomed saucepan.
  2. If you have a few minutes of extra time, heat the damp rice over medium heat until it is dry and starts to smell roasted.
  3. Add water and bring to a boil.  Once the mixture boils, reduce heat to the lowest setting possible, cover tightly and simmer for 40 to 45 minutes, or until water is absorbed.
  4. Serve hot.  Freeze leftovers. Makes 4, 1-cup servings.

Nutrition information per serving: 170 calories, 2 gram fat, 2 mg sodium, 37 grams carbohydrates, 3 grams fiber, 3 grams protein, 2% calcium, 6% iron.


With a Rice Cooker: To be honest, I never cook rice other than in a rice cooker. In a rice cooker, the rice always seems to come out perfectly, and I don’t get the same results when I cook rice myself. I also like that I can set the time I want my rice to be ready when I use a rice cooker. I have this Zojirushi NS-WAC10-WD 5.5-Cup (Uncooked) Micom Rice Cooker and Warmer, and I have purchased it for family and recommended it to friends. I would prefer that it had a stainless steel bowl, but it doesn’t. Oh well!

I also use my rice cooker for Steel Cut Oats with Fruit and Flaxseed Meal, other grains, polenta, and pilafs.
