As many of you know, when my husband was only 10, his dad died of a heart attack. Chris didn’t have any siblings, so he and his mom made up a family of two. Since his mom just cooked for the two of them, and Chris was a picky eater, she tended to make the same simple recipes over and over, and most contained the same two ingredients: meat and potatoes. Chris grew up in a meat and potatoes family, and he loved his mom’s pot roast, which she made for special occasions.

Although he’s given up meat, Chris still loves potatoes. Sometimes I wonder whether he would be perfectly happy to eat potatoes as part of every dinner. When I’ve cooked spicy ethnic dishes several days in a row and I ask him if he’d like me to fix anything in particular, he often replies, “How about something with potatoes?”

This recipe was born a few years ago when he made such a request. To be fair, I’m always experimenting in the kitchen, and not everything I make tastes good, so I totally understand when Chris is in the mood for something tried and true, which is what Weeknight Lentil and Potato Stew turned out to be. It’s not fancy; but, reminiscent of pot roast, it’s cheap and easy to make; and it’s comfort food. If you live in an area where winter has yet to desert you, consider giving it a try.

I always make this stew in my Instant Pot, but lentils cook so quickly on the stove that you could do that too. Either way, start by browning chopped onions and garlic. If you’re using a pressure cooker, toss in all the remaining ingredients and cook. If you’re using your stove, toss in everything except the tomatoes and cook (tomatoes, being acidic, increase the time needed to cook the lentils). Add the tomatoes when the lentils are soft. How simple is that?

We think the combination of lentils and mushrooms in the recipe give the stew a meaty mouth-feel and flavor. Of course, as vegans, maybe we don’t really know what we’re talking about. Still, we can say that the combination is hot, satisfying, and yummy. We hope you’ll think so too.

  1. Sounds great. We follow Michael Polan’s three rules – 1. eat food; 2. not a lot; 3. mostly vegetables. We’re free to eat meat or not and we mostly not. And that’s not strictly grammatical. Then again, we’re not strictly anything. Anyway, your recipe looks delicious and we’ll be cooking up a batch tomorrow. Thanks.
